INGREDIENTS

2 pkgs active dry yeast
5 to 5 1/2 cups flour (sifted)
2 cups milk
3 Tbsp sugar
3 Tbsp shortening
2 tsp salt

PREPARATION


In a large mixing bowl, combine yeast and 2 cups of flour.

Heat together milk, sugar, shortening, and salt; just until warm, stirring to melt shortening. Add to dry yeast mixture. Whisk for 1 to 2 minutes, scraping the bowl constantly to blend well. Blend remaining flour, gradually, until a moderately stiff dough is formed.

Turn out on a floured surface and knead until smooth and elastic. Place in a greased bowl, turning once. Cover and let rise until doubled in size, about 40 minutes. Punch down; cover and let rest for 10 minutes.

Form dough into balls about 1 1/2 in. in diameter.

COOKING


Roll dough balls into 4 in. circles and place onto an ungreased baking sheet.

Place in oven and bake at 400 deg. for 7 to 9 minutes or until puffed and lightly browned. Cool on a cloth covered surface.
