INGREDIENTS

CARROT CAKE
1 ½ cups sugar
1 ½ cups oil
1 cup walnuts (chopped)
2 cups flour
2 ½ cups carrots (grated)
1 can pineapple (crushed drained)
1/2 cup raisins.
4 eggs
1 ½ tsp baking powder
1 ½ tsp baking soda
2 tsp cinnamon (ground)
1 tsp salt
CREAM CHEESE FROSTING
1 pkg cream cheese
½ cup butter
1 tsp vanilla
2 cups powdered sugar

PREPARATION


CARROT CAKE
Mix sugar, oil and flour; add flour, baking powder, baking soda, salt and cinnamon. Fold in grated carrots, raisins, crushed pineapple and nuts; blending all together,

CREAM CHEESE FROSTING
Combine cream cheese, butter and vanilla; creaming well. Gradually fold in the sugar, mixing well. If needed, add a small amount of milk to thin out.

COOKING


CARROT CAKE
Pour into a greased and floured round cake pan. Bake at 350 deg. for 40 to 50 minutes or until toothpick comes out clean. Cool for 10 minutes. and remove from pan.

Frost when completely cool and top with nuts.
