Sitto’s Italian Brain Patties

INGREDIENTS

BRAIN PATTIES
1 lb brains (lamb or beef)
1 cup olive oil
1 Tbsp flour
1 lemon (juiced)
EGG BATTER
2 eggs
½ tsp salt
½ tsp pepper
2 to 3 Tbsp parsley (chopped)

PREPARATION


EGG BATTER
In mixing bowl blend eggs, parsley, salt and pepper.

BRAIN PATTIES
Remove boiled brains and peel off skin. Form brains into small patties and set aside.

Serve or top with lemon juice.

Notes:
Your local butcher may or may not carry brains.

COOKING


Boil brains in water for about 5 min.

Heat oil in deep frying pan to 350 degrees.

Dip patties in egg batter, then flour, then egg batter and drop in hot oil. Fry patties until golden brown.
