INGREDIENTS |
1 cup water
1 cube butter
1 cup flour
4 eggs
1 tsp salt.

PREPARATION
Heat oven to 450 degrees.
MIXTURE
Cooled slightly; add unbeaten eggs, one at a time, beating after each addition. Make sure flour is well blended and mixture is stiff.
ECLAIR
Fill mixture into a pastry bag; press through onto a greased cookie sheet, making strips 4 in. long by 1 in. wide.

COOKING
MIXTURE
In a pan, bring water and butter to a boil; add flour all at once and beat vigorously, until a ball forms in center.
ECLAIR
Bake at 450 degrees for 15 minutes, reduce temperature to 350 degrees and bake for 35 to 40 minutes, or until done.
Fill eclairs with heavy cream filling, flavor as desired. Top with chocolate ,melted chocolate or frosting. |
