INGREDIENTS |
BASE
½ cup olive oil
1 tsp garlic (minced)
1 cup onion (chopped)
1 cup green onion (chopped)
½ cup green pepper (minced)
8 oz. tomato sauce
28 oz. whole tomatoes(canned)
2 cups red wine.
½ cup parsley (minced)
1 tsp salt
¼ tsp pepper (coarsely ground)
¼ tsp oregano (ground)
¼ tsp dried basil (crushed)
| SEAFOOD
1 ½ lbs. fish (firm-fleshed cubed)
½ lb. raw shrimp
1 large crab (cleaned cracked)
12 clams

PREPARATION
Heat oven to 350 degrees, if using casserole.
BASE
Chop onions, green onions and peppers, parsley and oregano; mince garlic.
SEAFOOD
Arrange crab, fish and shrimp, in a large pot or casserole, in layers. Add sauce and cover.
Notes:
You may add cayenne or similar spice to make the dish hotter.
This dish is great over pasta.
For substitutions and additions use:
1 whole Dungeness crab(cracked and cleaned)
1lb Squid (cleaned and cut up)
1 whole Lobster (cleaned and cut up)
1 Zucchini (cubed)

COOKING
BASE
Heat oil in large skillet, and add onions, green onion, green peppers and garlic; sauté until onion is just golden.
Add tomato sauce, tomatoes and wine. Blend, then add parsley, salt, salt, pepper, oregano and basil; cook for 5 min.
SEAFOOD and BASE
Cook on low heat or in the oven at 350 degrees for 30 minutes, or until fish is cooked.
Add in the clams; ass soon as they open they are done. Sprinkle with parsley and serve. |
