INGREDIENTS |
1 onion (chopped)
3 tsp parsley (chopped)
1 clove garlic (diced)
1 sprig rosemary (fresh)
1 whole chicken (cut up)
¼ cup celery (diced)
1 carrot (chopped)
1 zucchini (chopped)
2 red potatoes (cut up)
1 ½ cups tomato sauce
1 cube chicken bouillon
1 tsp salt
1 tsp pepper
2 cups rice (washed)
5 – 6 cups water.

PREPARATION
Cut up onion, chicken, celery, carrots, zucchini, and potatoes separately.
Chop parsley and garlic; remove rosemary from branch; wash rice.

COOKING
Sauté onion until golden brown; add parsley, garlic and rosemary. Toss in cut up chicken and sauté until golden brown. Add in celery, carrots, zucchini and potatoes.
Sauté all these together and add bouillon, salt and pepper; mix well. Add tomato sauce and cook until thick, then add 1 ½ cups of water. Cover and let cook for 30 to 45 min. or until chicken is well cooked.
In a separate pot, let 4 ½ cups water come to a boil. Add washed rice and boil for about 5 min. Lower heat and simmer for 10 to 15 min. or until rice is done.
Serve sauté over rice. |
