INGREDIENTS |
2 pkgs broccoli or spinach (frozen)
3 eggs
1 pint cottage cheese
butter
2 Tbsp flour
½ lb mixed jack or cheddar cheese (shredded).

PREPARATION
Heat oven to 350 degrees.
Put cooked broccoli/spinach into medium bowl.
Separate eggs into small mixing bowls, saving the whites. Beat egg yolks and add to vegetables. Beat egg whites until stiff and set aside.
Add cottage cheese to vegetable mixture, as well as, 1 cube of butter (save a little to grease the casserole).
Add flour, mixed cheese to the egg whites. When ready fold vegetable mixture into egg whites. Pour into casserole and sprinkle with cheese.

VEGETABLES
Cook broccoli/spinach until tender (do not over cook), set aside in strainer to drain for 10 minutes.
CASSEROLE
Bake casserole at 350 degrees for 30 to 45 minutes. |
