INGREDIENTS |
FILLING
4 sweet potatoes (mashed)
3 eggs
¾ cup evaporated milk
1 cup sugar
¼ cup water
¼ cup butter (melted)
2 tsp vanilla (extract)
½ tsp peach brandy
1 ½ cup heavy whipping cream
6 Tbsp powdered sugar.

PREPARATION
Heat oven to 375 degrees.
FILLING
Strain and mash boiled potatoes. In a separate bowl, mix eggs, butter, milk, water, vanilla and brandy. Stir in the sugar, then potatoes.
PIE CRUST
Prepare the pastry shell in a pie dish; pour potato mix over.

FILLING
Boil sweet potatoes until soft.
PIE
Bake at 375 degrees for 30 minutes. Cover the edges with foil and bake for another 25 minutes, or until knife comes out clean.
Cool and serve with whipped cream.
