Grandma Flo's Scalloped Corn with Zucchini Casserole

INGREDIENTS

4 zucchini
1 can cream corn
1 can whole corn(small)
1 cup milk
1 cup crackers (crumbled)
1 egg
½ tsp salt
5 Tbsp butter.

PREPARATION


Heat oven to 375 degrees.

Slice zucchini and place half into a buttered casserole.

Pour half the corn mix over the zucchini and sprinkle with half the crackers; dot with butter. Put the remaining zucchini on top of this and pour the rest of the mix over. Sprinkle with remaining crackers and dot with butter.


Notes:
Substitute zucchini with summer squash.

COOKING


CORN MIX
In a med. pan heat cream corn and whole corn with milk. Gradually add this mixture to a slightly beaten egg; add salt.

CASSEROLE
Bake in casserole at 375 degrees for 30 to 40 minutes, or until lightly browned.
