Grandma Flo's Eggplant Chicken

INGREDIENTS

1 eggplant (medium cubed)
1 tsp salt
4 chicken (boneless halves)
¼ tsp Italian seasoning
¼ tsp pepper
1 ¼ cups mozzarella cheese
(shredded)
3 8oz. cans tomato basil sauce

PREPARATION


Heat oven to 350 degrees.

EGGPLANT
Slice and place eggplant in a colander; sprinkle with salt and set aside for 30 minutes.

When ready, rinse Eggplant with water and pat dry. In a large bowl, add the eggplant and tomato sauce; toss well.

CHICKEN
Season chicken with salt, pepper and Italian seasoning.

Spoon eggplant mixture over the chicken and coat with the remaining cheese.

COOKING


CHICKEN
Using a non stick skillet, brown both sides of the chicken and transfer to a medium baking dish.

When ready, bake, covered, at 350 degrees for 40 minutes or until done.
