| Grandma Flo’s Crab Quiche Main Dishes

INGREDIENTS |
CRAB FILLING:
6 oz Alaska king crab (cooked)
4 eggs
1 cup half and half
½ tsp salt
1 tsp chives (chopped)
½ cup mushrooms (sliced)
1 dash pepper
½ cup parmigian cheese (grated)
1 pastry shell.
| TART PASTRY SHELL
1 cup flour
¼ tsp salt
6 Tbsp butter
1 egg yolk
2 Tbsp water (cold).

PREPARATION
Heat oven to 375 deg.
PASTRY SHELL:
Mix flour with salt and butter. Beat egg yolk and water in small bowl; stir into flour mix until dough clings to sides. Roll into a ball, put into a plastic baggie and refrigerate for 20 minutes.
Roll out dough onto a lightly floured surface; cut into a circle 2 in. larger than the pie dish. Fold into quarters for ease, and unfold into dish. Gently press against the bottom and sides. Trim and curl edge to match the pie dish; refrigerate for 20 minutes.
CRAB FILLING:
Beat together eggs, half and half, and seasonings. Place crab and mushrooms on the bottom of the pie shell. Sprinkle with the cheese and pour the egg mix over the top.

Bake at 375 degrees for 35 to 40 minutes or until center is firm. |
