Grandma Flo’s Chocolate Square Cake

INGREDIENTS

CAKE:
1 cup chocolate (ground
2 ¼ cups flour
3 tsp. baking powder
½ tsp. salt
½ cup butter
½ cup sugar
2 eggs
1 tsp. vanilla
1 ¼ cups milk
¼ cup mint (leaves whole)
¼ cup peppermint (crushed)
FROSTING:
1 lb powdered sugar
1/3 cup shortening
½ cup milk
1 tsp vanilla

PREPARATION


Heat oven to 350 degrees.

CAKE:
Sift flour, baking powder, salt and chocolate; set aside. Mix the sugar and butter to a cream. Add the eggs, one at a time; beating after each. Add the vanilla, whisk thoroughly.

Mix all ingredients together with the milk; alternate between milk and mixture to ensure blend, mix well.

FROSTING:
Fold powdered sugar and shortening together, blending well. Slowly add in the milk, beating until fluffy. Add in vanilla.

Notes:
You may add cocoa powder, to taste, or melt chocolate, for a chocolate frosting.

COOKING


When ingredients are well blended, pour into 2 in. sq. baking dishes. This will make 2 batches; use 2 baking dishes.

Bake batter at 350 degrees for 35 minutes or until done. Remove and cool.

Frost and sprinkle with peppermint and mint leaves.
