Grandma Flo's Baked Mashed Potatoes

INGREDIENTS

3 lbs potatoes (quartered)
2 eggs
1 cup ham (cooked diced)
1 cup mozzarella cheese (diced)
2/3 cups parmesan cheese (grated)
3 Tbsp parsley (minced)
¾ tsp salt
¼ tsp pepper
½ tsp garlic powder
1 clove garlic (sliced)
3 Tbsp butter.

PREPARATION

Heat oven to 350 degrees.

In a large pot or Dutch oven, put potatoes in water, cover and bring to a boil. Lower heat and simmer for 10 to 25 minutes, or until tender. When done, drain and mash well.

In a large bowl, beat eggs well. Add cheese, ham, parsley, garlic, salt and pepper. Blend into the mashed potatoes. Pour this into a 2 qt baking dish and spot with butter.

COOKING

Bake at 350 degrees, uncovered for 25 to 30 minutes or until lightly browned. Sprinkle with parsley and serve.
