Grandma Flo's Artichoke Nibbles

INGREDIENTS

2 jars marinated artichokes
1 small onion (chopped)
1 clove garlic (minced)
4 eggs
¼ cup fine dry bread crumbs
¼ tsp salt
1/8 tsp pepper
1/8 tsp oregano
1/8 tsp liquid hot pepper seasoning
1 ¾ to 2 cups of sharp cheddar cheese
2 Tbsp parsley (minced).

PREPARATION


Heat oven to 325 degrees.

Drain marinade from one of the jars into frying pan; drain and discard marinade from the other.

Chop all artichokes and set aside. Add garlic and onion to frying pan and sauté until onion is golden.

In a bowl, beat eggs with a fork; adding bread crumbs, salt, pepper, oregano and hot pepper seasoning. Stir in cheese, parsley, artichoke, and onion mixture.
Pour into a 7 x 11 in. baking pan.

COOKING


Bake at 325 degrees for 30 minutes. Let cool and cut into 1 in. squares.
