Grandma Flo’s Custard Bread Pudding

INGREDIENTS

3 eggs (separated)
2/3 cup sugar
¼ tsp salt
1 tsp vanilla
2 cups milk
1 cup bread crumbs (soft).

PREPARATION


Heat oven to 325 degrees.

In a medium bowl, lightly beat egg yolks. Add 1/3 cup sugar, salt, ¼ cup milk and vanilla.

Over low flame, heat remaining milk and stir in egg yolk mixture. Blend in bread crumbs. Turn into a 1 qt greased casserole.

Beat egg whites until soft peaks form. Gradually add remaining sugar and beat until stiff, but not dry.

COOKING


Place in a pan of hot water and bake uncovered at 325 degrees for 1 hour or until knife comes out clean.

Spread egg white frosting over pudding and bake for 15 minutes longer or until meringue is golden.
