Grandma Flo’s Pineapple Bread Pudding

INGREDIENTS

4 Tbsp butter
1 cup sugar
½ tsp cinnamon
4 eggs
1 ½ cup pineapple (crushed)
½ loaf bread (cubed)
2 cups walnuts (chopped)

PREPARATION


Slice and crush pineapple, cube bread and chop walnuts.

In a medium bowl, lightly beat butter, sugar and cinnamon; add eggs and continue to beat until light and fluffy. Fold in crushed pineapple, bread cubes and nuts.

COOKING


Turn into a 1 ½ qt buttered casserole; bake uncovered at 325 degrees for 45 minutes or until knife comes out clean.
