INGREDIENTS |
2 onions (1 chopped)
¼ cup parsley (chopped)
2 cloves garlic (chopped)
1 ½ lb stewing beef (cut up)
1tsp salt
½ tsp pepper
1 cup string beans (halved)
3 carrots (sliced)
2 zucchini (sliced)
5 potatoes (quartered)
2 cans tomato sauce (small)
4 Tbsp olive oil

PREPARATION
Chop one onion and quarter the other. Coarsely chop the parsley and garlic.
Slice all the vegetables and quarter the potatoes. Cut beef into 1in. cubes. |
COOKING
In a large pan, Sauté onion in oil until golden in color. Add parsley and garlic and continue to sauté, about 3 minutes.
Add the meat and continue to sauté until beef is browned. About 10 minutes. Add salt, pepper and the vegetables; make sure to add the potatoes last.
Add the tomato sauce, and a little water if too thick. Cover and cook over low heat for 45 minutes or until done.
