INGREDIENTS |
1 lb. zucchini
2 eggs (beaten)
6 slices bread (white)
3/8 cup breadcrumbs
3/8 cup milk
3 Tbsp butter
1 cup ricotta
4 Tbsp Parmigiano (grated)
1 tsp salt

PREPARATION
Preheat oven to 325 deg.
ZUCCHINI:
Cut cooked zucchini lengthwise, once it is cooled. Scoop out the pulp with a spoon; be careful not to cut too deep, and set aside.
FILLING:
Remove the inside of the bread and soak in milk, then squeeze out the moisture. In a bowl, mix ricotta, Parmigiano, zucchini pulp, eggs and the soaked bread; add salt to taste.
Stuff zucchini shells with mixture and top with breadcrumbs and thin pats of butter.

COOKING
Boil zucchini in salted water for about 5 minutes; set aside to cool.
Once prepped, place zucchini side by side in a greased baking pan. Bake at 325 deg. for 30 minutes, or until tops are browned.
