INGREDIENTS |
1 ½ cups flour
½ cup cornmeal (coarse)
1 Tbsp baking powder
½ tsp salt
¼ cup sugar
2 eggs (beaten)
1 cup buttermilk
1 teaspoon saffron (threads)
2 Tbsp water
¼ cup butter (melted)
½ cup cheddar cheese (grated)
1 ½ cups whole kernel corn
Oil (enough for frying).

PREPARATION
SAFFRON:
Soak saffron in water.
FRITTERS:
Stir together flour, cornmeal, baking powder, salt and sugar. In a separate bowl, combine eggs, buttermilk and saffron. Fold in the dry ingredients and stir in melted butter, cheese and lastly corn.
Heat oil in deep fryer or pan until very hot.

COOKING
Drop mixture into the oil by tablespoon, being careful not to splatter. Deep fry for about 5 minutes or until golden brown and cooked through.
