Grandma Flo's Custard Bread Pudding

INGREDIENTS

3 eggs (separated)
2/3 cups sugar
¼ tsp salt
2 cups milk
1 tsp vanilla
1 cup bread crumbs (soft)

PREPARATION


Lightly beat egg yolks, add 1/3 cup sugar, ¼ cup milk, vanilla and salt. Heat the remaining milk and stir in egg yolks. Blend in bread crumbs.

Pour into a buttered 1 qt. casserole, placing casserole in a large pan of hot water.

Beat egg whites until soft peaks form; gradually add remaining sugar and beat until stiff, but not dry.

COOKING


Bake uncovered at 325 deg. for 1 hour or until done.

Spread egg white mixture over the pudding and bake for another 15 minutes or until meringue is golden.
