Grandma Flo’s Lentil Soup

INGREDIENTS

2 cups dry lentils
1 qt of water (enough to fill pot)
1 onion (large)
5 fresh tomatoes
2 bunches spinach (or swiss chard)
6 stalks of celery
Salt
2 chicken bouillons.

PREPARATION


Cut up onion, celery, spinach or swiss chard; quarter tomatoes.

Notes:
You may dice carrots to add to the soup.

COOKING


Put lentils into a large pot of salted water; add onion, celery and tomatoes. Bring the water to a boil, then add cut up spinach or swiss chard. toss in the 2 bouillon and simmer for a good hour or so.

When done; serve as is, or you may transfer some soup to a smaller pan and add pastina.
