Grandma Flo’s Scalloped Potatoes

INGREDIENTS

5 large potatoes
1/4 cup finely chopped onion
Dash of paprika
parmesan cheese (thinly sliced)
SAUCE
3 tbsp butter
3 tbsp flour
3tbsp salt & pepper
2 1/2 cups milk

PREPARATION


Heat oven to 350 degrees.

POTATOES
Wash potatoes, peel and cut in thin slices. (about 1/8 in. thick)

MAIN DISH
In a greased 2qt. casserole pan, arrange the potatoes in a scale pattern. This should make 2 layers. Top each layer with onions and 1/3 sauce.

Top with any remaining potatoes & sauce. Dot the top with butter and sprinkle with paprika.

Notes:
About 5 minutes before done, slice parmesan cheese thinly and place over the top.

COOKING


SAUCE
Melt butter in pan over low heat; blend flour, salt, pepper & paprika; continuing on low heat, stir mixture until smooth and bubbly. Remove from heat. Slowly stir in milk.

Return to heat and boil. (Stir Constantly) Boil mixture for 1 minute; continuing to stir. Remove from heat.

MAIN DISH
Cover and bake for 30 minutes. Uncover and return to oven for 60 minutes, or until tender. Let stand for 7 minutes.
