Grandma Flo's Ricciarelli (Almond Cookies)

INGREDIENTS

4 egg whites
3 ½ cups sugar
3 ¼ cups almonds (blanched freshly ground)
1 orange rind
¼ cup orange juice
½ cup powdered sugar.

PREPARATION


Beat egg whites until stiff, gradually adding in the sugar. In a food processor, grind almonds; mix with orange rind and orange juice. Fold this into the egg whites.

Line a cookie sheet with brown, buttered paper. Spoon mix onto this, in oval shapes about an 1 ½ in. long; 3 in. apart.

COOKING


Bake in oven at 300 degrees for 20 minutes, or until edges are lightly brown. Let cool before removing.

Cover with powdered sugar and serve.
