Diva Sardi's Fried Potato Balls

INGREDIENTS

6 large potatoes
4 eggs
1 cup sugar
1 shot crème de coco or streya liquor
1 cup flour
1 bottle oil (enough to fry).

PREPARATION


POTATO BALLS
In a large bowl mash potatoes and add eggs, sugar, liquor and flour.

Mix all ingredients until firm enough to roll into balls

COOKING


POTATOES
In a large pot boil potatoes until soft. Remove and rinse.

POTATO BALLS
In a deep pan heat oil and fry balls until golden brown; set balls on paper towel and dab off remaining oil.
