Grandma Flo’s Cauliflower Dish

INGREDIENTS

1 large cauliflower
1/4 cup water
1 tsp paprika
SAUCE
¼ cup green peppers (sliced)
1 cup mushrooms (sliced)
¼ cup butter
1/3 cup flour
2 cups milk
1 cup swiss cheese (shredded)
1 Tbsp pimientos
1 tsp salt
1 tsp pepper

PREPARATION


Heat oven to 325 degrees

Break cauliflower into florets; slice green peppers; clean and slice mushrooms.

Place half of the cauliflower in a greased 2 qt. baking dish; top with half the sauce. Repeat layers.

COOKING


In a large saucepan cook cauliflower, only using a small amount of water, for 6 or 7 minutes or until crisp, yet tender. Drain well and set aside.

In skillet, sauté green peppers, pimentos and mushrooms in butter for 2 minutes. Add flour and gradually and stir in the milk. Bring to a boil and let boil for 2 minutes; stirring constantly. Remove from heat and mix in cheese until melted; add salt and pepper.

Bake dish uncovered at 325 degrees for 25 minutes or until bubbly. Add paprika.
