Grandma Flo's Brandied Kumquat Marmalade

INGREDIENTS

4 cups large kumquats(sliced/seeded)
½ cup lemon juice
½ tsp butter(unsalted)
1 pkg SURE Jell
6 whole cloves
½ stick cinnamon (broken)
9 ½ cups sugar
¼ cup brandy
6 cups water.

PREPARATION


KUMQUATS
Thinly slice and seed large kumquats.

COOKING


In large sauce pan, combine kumquats and water; bring to a boil and simmer for 1 hour. Measure this to 7 cups, adding water if needed.

Return to large sauce pan and add lemon juice, butter, and SURE jell.

Turn heat to high; bring to a boil, adding cloves, cinnamon and sugar; mixing well. Bring to a rolling boil and boil hard for 4 minutes; stirring constantly.

Remove from heat; add brandy and stir for 5 minutes. (important)

Ladle quickly into sterilized jars, leaving a 1/2 in. space for air. Wipe excess jam from rims of jars and tighten caps. Process these in a boiling water bath for 10 minutes. Remove from water and cool
