Fish and Seafood

INGREDIENTS

½ cup olive oil
1 tsp garlic (minced)
1 cup onion (chopped)
1 cup green onion (chopped)
½ cup green pepper (minced)
8 oz. tomato sauce
28 oz. whole tomatoes(canned)
2 cups red wine.
½ cup parsley (minced)
1 tsp salt
¼ tsp pepper (coarsely ground)
¼ tsp oregano (ground)
¼ tsp dried basil (crushed)
1 ½ lbs. fish (firm-fleshed cubed)
½ lb. raw shrimp
1 large crab (cleaned cracked)
12 clams

PREPARATION


BASE
Dice onions, green onions and peppers, garlic, parsley, basil and oregano; quarter tomatoes.

SEAFOOD
Arrange crab, fish and shrimp, in a large pot or casserole, in layers. Add sauce and cover.

You may add cayenne or similar spice to make the dish hotter.

COOKING


BASE
Heat oil in large skillet, and add onions, green onion, green peppers and garlic; sauté until onion is just golden.

Add tomato sauce, tomatoes and wine. Blend, then add parsley, salt, salt, pepper, oregano and basil; cook for 5 minutes.

SEAFOOD AND BASE
Cook on low heat for 30 to 45 minutes, or until fish is cooked.

Add in the clams; ass soon as they open they are done. Sprinkle with parsley and serve.
