INGREDIENTS

SALAD
6 cups romaine (torn)
2/3 cup croutons
½ cup Parmigiano (shredded)
2 Tbsp pepper (coarse ground)
DRESSING
3 Tbsp olive oil
4 ½ tsp lemon juice (fresh)
1 tsp mustard
1 clove garlic (minced)

PREPARATION


DRESSING
In a jar with a tight-fitted lid, combine oil, garlic, lemon juice and mustard; shake well and set in refrigerator to cool.

SALAD
Tear romaine into 1 ½ in. pieces. Shred Parmigiano.

COOKING


In a bowl, mix salad, Parmigiano, croutons and pepper; top with dressing and toss well, making sure dressing coats salad well.
