Mrs. Goethel’s Caramel Cheesecake Custard

INGREDIENTS

2/3 cup caramel topping
1 pkg cream cheese (large)
½ cup sugar
1 tsp vanilla
6 eggs
2 cups milk

PREPARATION


Pour caramel topping into a buttered round 9in. pan, at least 1 ½ in. deep; set aside.

In a large bowl, beat the cream cheese until smooth, and then beat in the sugar and vanilla. Add eggs one at a time, beating at a medium pace until smooth after each addition. Blend in milk at a slow pace. Carefully pour cheese mixture over caramel topping.

COOKING


Set cake pan into a larger pan, and bake in the oven at 350 deg. for 50 minutes or until set in center.

Cool custard on a rack, and then loosen from pan edge with a knife. Invert onto a rimmed serving plate; spoon over any remaining caramel; chill before serving.

Notes: To avoid spilling, do not pour all the cheese mixture into the pan until at the oven.
